Pumpkin is so delicious. It's especially delicious in this recipe. You can taste the vanilla flavor but I love the pumpkin flavor bursting through. I had this for breakfast today and it was a super simple recipe.
I have not made or had any type of chocolate pudding in FOREVER! Mainly because I stopped buying unsweetened cocoa (you know how you get tired of an ingredient after a while?). But I bought some the other day for my cooking class and I had the other ingredients for the pudding so here it is! I made a cool video for you too 😀 This pudding requires a food processor and can be made with no added sweetener (I give a suggestion for an added sweetener, though). This is one of my favorite easy vegan dessert recipes.
I made these bites for an art run that was being led by my friend Marnie who is the founder of Runstreet. She brings people together and leads them in a relaxing run around NYC while the group looks at street art. She asked me to make these treats for her Christmas art run and I was so happy to do it. I whipped these treats up when I messed up making another recipe. These turned out so great. Today is an awful day for pictures. It's STILL overcast and rainy and I'm so glad I ran last night. Speaking of a run, everytime I run around my neighborhood, I appreciate how lucky I am to live here on the Upper East Side of Manhattan. It's quiet, calm, close to everything (thanks Q train!) and bustling with restaurants, shops, Central Park and many other cool places to run. I found myself loving all of that last night in between epic humidity and raindrops. So, anyway, this parfait. I ate this before my coffee this morning, how could I not?
Running takes alot of effort and planning in order to keep your body healthy and strong. There are so many aspects of running to think about but no one is more important than the other. Running requires healthy muscles, bones, clean nutrition and a healthy state of mind: confident, positive and strong. To be the best runner you can be is to think about all of the ways it will take for you to feel your best. It's also important to remember that not every runner looks the same; it matters how you feel.
This long Memorial Day weekend has been just lovely, spending time with friends and eating good vegan food. It's super hot in the city so running was a challenge today but I did it and followed it with an awesome strength workout. So while I savor this long weekend and reflect on just how lucky I am and how beautiful this life is, I want to share a few more things I'm loving lately!! Oh and be on the lookout for my next recipe, cauliflower mac and cheese. Oh yeah!
I made these trail mix bites for a NYC run today and I received so many compliments about them that I had to add to this post! I made a few versions of these bites and brought them to the Runstreet group run event this morning; we ran 4 miles on the lower east side and took pictures of different wall art around the city. It was such a great workout and afterwards some of us stayed for a strength training workout that was just perfect. I wanted to post the few different ways you can make these bites based on what ingredients you have in your kitchen.
Blueberries are everywhere, at least for the next week and then the season ends. Every trip to the farmers market ends in at least two quarts of organic blueberries that I use in recipes or just eat for a snack. There is something about blueberries that appeals to me more than strawberries sometimes; maybe it's how easy they are to eat and because they are never too sweet or sour but I just love taking a handful and munching on them.
I make chia seed pudding alot but this time I made it without any added coconut sugar and some fruit and homemade cashew butter and it was awesome. I'm not usually good at layering everything to look pretty but I must say this is a good picture! Grab some fresh berries and some raw cashews for this recipe and you got yourself a yummy, filling breakfast. Kids will love this breakfast because it's in a cool mason jar and it's sweet and fun.
It is my 5th day eating fully raw and I'm loving it. I'm not going to say I haven't thought about cooked food but I've been able to stay on track. It's so hot and humid so I'm sure that has something to do with wanting cold fresh fruits and veggies.
I'm still on a high from my half marathon on Saturday! I finished 13.1 miles in 2 and a half hours and I just couldn't be prouder of myself. I felt energized, confident, inspired, I had a killer playlist with nothing but trance music and I just fed off the crowd of runners and the very supportive spectators. It poured for about a half hour during the run but I just kept going, hoping my iPod wouldn't get damaged. My earbuds went kaput though; the right one lost sound as I began the last portion of the run so I only had music coming into my left ear. It was better than nothing and I got to hear the crowd. I used my music to time myself too so I was hoping the other earbud would not crap out. What a run! This was my first NYC long run; so much time and energy went into my training, not to mention worrying and even though I said this would be my last long run, I'm already thinking about a run in the fall. Three ingredients and a whole lotta awesomeness. I often find myself in the jam aisle at the grocery store pondering what to get and trying to find the jam with the least amount of sugar. Even if the jam is made with natural fruit sugars, there is always some kind of preservative or something I don't want in it. So, I thought, let me just make my own jam. It turned out fabulous and I just had to share.
I fixed my website so that my domain name points directly to my blog!!! And the ads are back on my website!!! And the design looks so good, I'm so so happy!! Yay, the greatest feeling ever is loving the way your website looks. It's admiring how easy it is for your readers to navigate (see ingredient labels at the bottom of the blog). It's creating a website that you love to open in your browser....that is the greatest feeling as a blogger! I love Google blogs; everything I do is google, email, chats, my phone is a google phone.
Chia chia! I love me some chia seeds. They are full of omegas, fiber, healthy fat and energy, this is a great snack before a run or a middle of the day pick me up.This is also a great snack if you are craving sweets like I do. My cupcake craving is quickly satisfied with this bowl of goodness.
Nothing says summer like plenty of fruit and a super sweet and vegan banana pudding. I made this with chia seeds and coconut cream. It is high in fat so I would only eat a small serving at once especially if you're doing high carb low fat. But if you need a sweet pick-me-up, this would be perfect.
Last night I was thinking a lot about baking, which I haven't done in ages but I've been in the mood to make an awesome blueberry muffin. Since I didn't have the ingredients for these, I made these cookies out of chickpeas and other natural ingredients. I added walnuts, chia seeds and oats to punch them up with more fiber and omegas. Yum...these are good and make a great snack with your cup of tea. This recipe was floating around fb and pinterest for a while a few months ago.
I was so excited to make these last night! The possibilities are endless for these little jars of happiness and they bring convenience with them. They are great for kids especially when you don't have time to make breakfast in the morning and you need a nutrient packed beginning for your child's day. I made mine in mason jars but you can use a bowl and just cover it. No cooking involved just raw rolled oats with your favorite milk and ingredients.
