Strawberry Chia Jam

Three ingredients and a whole lotta awesomeness. I often find myself in the jam aisle at the grocery store pondering what to get and trying to find the jam with the least amount of sugar. Even if the jam is made with natural fruit sugars, there is always some kind of preservative or something I don't want in it. So, I thought, let me just make my own jam. It turned out fabulous and I just had to share.

Guest Blogger and A Chocolate Shake Recipe

I have another guest blogger today, on this wonderful Meatless Monday, a fellow veggie consumer and alum of the Institute for Integrative Nutrition, Kelly Anne Monahan!  She recently published an ebook that focuses on healthy recipes and clean eating.  Kelly talks about her story, what led her down the path of health and nutrition and she gives some information about her book.  I'm so happy to post her story! Banana Cream Pudding

Nothing says summer like plenty of fruit and a super sweet and vegan banana pudding. I made this with chia seeds and coconut cream. It is high in fat so I would only eat a small serving at once especially if you're doing high carb low fat. But if you need a sweet pick-me-up, this would be perfect.

Veggie kids!

I wanted to post some vegan snacks for kids because I know it can be hard to get kids to eat balanced, nutritious meals. These snacks are perfect for kids with milk or egg allergies or for vegan parents who want to raise vegan kids. They are easy to make and I think most kids would enjoy them.  The first photo is a simple dish of organic mixed berries. Berries are sweet and delicious so this is a quick, healthy snack. The second photo is hummus I made at home. It's not completely from scratch but I combined chickpeas with tahini sauce from Trader Joe's. I used my food processor and out came yummy hummus. You can give your child carrots to dip or organic tortillas. The third photo is homemade popcorn. I buy organic popping corn from Trader Joe's and use my popcorn maker. I usually add a little sea salt and cinnamon, you can also add Earth Balance vegan butter. Fourth photo, cut up a banana and put a little bit of peanut butter in between the pieces.
